Banana Bread
Ingredients
75ml milk
1 tsp white wine or cider vinegar
250g plain flour
1 tsp bicarbonate of soda
½ tsp salt
110g unsalted butter
195g caster sugar
2 eggs
250g mashed ripe bananas (about 3 bananas)
75g - 100g chocolate chips/100g chopped up chocolate bar (optional)


Instructions
Preheat the oven to 180°C. Combine the milk and vinegar in a small bowl and allow to stand for 10 minutes. Meanwhile, butter and flour a 23 x 10cm, 7cm deep loaf pan.


Sift the flour, bicarbonate of soda and salt into a large bowl. In a separate bowl, cream the butter with the sugar until pale and fluffy. Add the eggs, one by one, beating well after each addition. Fold in the mashed bananas and the chocolate if using. Add the sifted dry ingredients alternately with the milk mixture. Mix until just combined.

Pour the mixture into the prepared pan. Bake for 50 - 60 minutes, it depends how gooey or dry you would like it.
Makes 1 large loaf. If you would like 2 loafs, double the recipe and use 2 pans.

Oatmeal Cookies
Ingredients
165g large rolled oats
90g plain or spelt flour
1 tsp ground cinnamon
½ tsp bicarbonate of soda
½ tsp salt
110g unsalted butter
65g light soft brown sugar
65g caster sugar
1 egg
75g - 100g chocolate chips/100g chopped up chocolate bar (optional)

Instructions
Preheat the oven to 190°C. Lightly grease two baking trays.

Combine the oats, flour, cinnamon, bicarbonate of soda and salt in a large bowl. Stir to mix through. In a separate bowl, cream the butter with the brown and caster sugars until pale and fluffy. Add the egg and beat until well mixed. Fold in the dry mixture and the chocolate if using.
Drop tablespoonfuls of the dough onto the prepared baking trays, leaving space for spreading. Bake for 8 - 10 minutes depending how gooey or dry you would like them. Leave them to cool on a wire rack. 
Makes 20 - 25 cookies. If you would like 40 - 50 cookies, double the recipe and use two baking trays.
